Desi ghee has been part of Pakistani kitchens for generations. The good news is you do not need special recipes to enjoy it. Here are six simple ways to use it every day, plus how to store it so it stays fresh.
1. Tadka for daal and sabzi
Heat a spoon of ghee, add zeera, garlic and a dried red chilli, and pour it over daal just before serving. Ghee holds the aroma of the spices better than most oils, so a small amount goes a long way.
2. Parathas and roti
A thin layer of ghee on a hot paratha or roti makes it soft and fragrant. For layered parathas, brush ghee between the folds before rolling.
3. Halwa and mithai
Suji halwa, gajar halwa and pinni all taste richer with desi ghee. Roast the suji or atta slowly in ghee on low heat until it smells nutty.
4. Rice and pulao
Add a spoon of ghee when you put the rice in water. The grains stay separate and the pulao gets a light, homely aroma.
5. Morning chai or warm milk
Many families add a small spoon of ghee to warm milk at night, especially in winter. It is an old habit that a lot of people still enjoy.
6. Roasting dry fruits and seeds
Lightly roast almonds, makhanay or seeds in a little ghee for a quick snack. Keep the heat low so they do not burn.
A little desi ghee goes a long way. One spoon is usually enough to change the taste of a whole dish.
How to store desi ghee
- Always use a clean, dry spoon. Water or food in the jar shortens its life.
- Keep the lid closed and store it away from direct sunlight and the stove.
- Ghee can turn solid in winter and soft in summer. Both are normal.
Our desi ghee is made the desi way, slowly, with the grainy texture and aroma of ghee made at home.
